Wok Asparagus with Shrimp,
Chili & Ginger

Stir-fried in a wok, asparagus develops intense roasted flavors while remaining pleasantly crisp — no overcooking, no loss of flavor. Combined with juicy, crunchy shrimp, fresh ginger and a pleasant heat from chili, the result is a quick, aromatic dish with depth. The glossy umami glaze made from soy sauce and oyster sauce brings everything together.

Ingredients:

  • 500 g whole white tiger shrimp
  • 500 g asparagus (white and green)
  • 2 shallots
  • 2 tbsp heat-resistant oil for frying (e.g. coconut or peanut oil)
  • 1 tsp sesame oil (toasted)
  • 1 lime (zest and a little juice)
  • 1 piece of ginger (approx. 1 x 3 cm)
  • 3 garlic cloves
  • 1–2 red chilies (depending on how spicy you like it)
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • Sesame seeds for garnishing

How to cook it:

  1. Peel the shrimp and remove the intestinal tract by making a small slit along the back. Peel the asparagus — the white spears completely and the green spears down to the lower third — and cut into bite-sized pieces on the diagonal so that they cook evenly and quickly in the wok. Roughly chop the shallots, finely slice the garlic and cut the ginger into fine strips. Cut the chilies into rings, depending on the desired level of heat.

  2. Heat the wok until very hot and add 2 tbsp heat-resistant oil. First add the white asparagus and stir-fry over a high heat; after about two minutes, add the green asparagus and continue stir-frying until the first toasty aromas develop.

  3. Add the shrimp, shallots, garlic and ginger and continue stir-frying over a high heat. Shortly afterwards, add the chili rings.

  4. After a total cooking time of about five minutes, add the soy sauce and oyster sauce to the wok and toss everything together well. The liquid will reduce slightly and coat the asparagus and shrimp like a glossy glaze. The asparagus should still have a bit of bite. Add a little water if necessary.

  5. Finally, season to taste with lime zest and a little lime juice, finish with the toasted sesame oil and sprinkle with sesame seeds.
