Beer Batter · Sweet Mustard
Ingredients:
- 250 g Bavarian shrimp
- 120 ml pale beer
- 100 g wheat flour (type 405)
- 40 g cornstarch
- ½ tsp baking powder
- A pinch of salt
For the dip
- 3 tbsp sweet Bavarian mustard
- 2 tbsp medium-hot mustard
- Juice of half a lemon
- 2 tbsp runny honey
How to cook it:
Mix the flour, cornstarch, baking powder and salt in a bowl.
Gradually add the beer and stir well until you have a smooth batter. If the batter is too thick, you can add a little more beer.
Leave the batter to rest for about 15 minutes.
In the meantime, heat the oil or fat in a saucepan or deep fryer. The temperature should be around 175°C.
Dip the shrimp in the beer batter and allow any excess batter to drip off.
Place them very carefully into the hot oil and fry for about 4 minutes until golden brown. Remove with a slotted spoon and drain on kitchen paper.
For the dip, mix together the sweet mustard, honey, lemon juice and medium-hot mustard in a bowl. Stir the ingredients well until you have a smooth mixture. Taste the dip and season with more mustard, honey or lemon juice if needed, according to personal taste. Transfer the dip to a serving bowl and serve with the crispy shrimp.
